You will need: two and a half cups of penne rigate pasta, 1 tablespoon of olive oil, 2 cloves of garlic (minced), one and a half tablespoon of freshly grated lemon zest, 2 cups of cherry tomatoes (halved), 4 cups of baby spinach leaves, a quarter of chopped kalamata olives, 1 jar of roasted red peppers (sliced), one tablespoon of fresh oregano finely chopped, and a quarter of tablespoon ground black pepper.
It already smells amazing only when you think about all those wonderful ingredients! Now to mix the whole thing up: first cook the pasta according to instructions on the box.
Meanwhile heat the oil in a large pan and add garlic. Cook until it becomes light brown in color. After the garlic is done add roasted peppers and cook 3 to 4 minutes stirring occasionally.
In the end add all the other ingredients: tomatoes, olives, lemon zest, spinach, oregano, and pepper. Cover, and cook until it looks ready. When everything is done mix with the past and serve. What an amazing color and smell! Your guests will definitely be impressed.
