Navratan Korma – Navratan means nine gems so choose 9 vegetables to add in the food. This is a vegetarian Korma in a tomato sauce compared to the usually yogurt based sauce.
You will need (the list is a bit long but it is worth the effort): 3 tablespoons vegetable oil, 1/3 cup mixed nuts, 1 medium onion, half a teaspoon of garlic pasta, half a teaspoon of ginger pasta, 1 can of tomato sauce, 1 teaspoon of cayenne pepper, half a teaspoon of ground turmeric, 2 teaspoons of coriander, 1 teaspoon garam masala, 1 cup of water, a quarter cup of raisins, a half cup chopped carrots, a half cup chopped green bell pepper, half a cup chopped fresh green beans, half a cup green peas, 1 cup of chopped potatoes, 4 ounces of paneer, 1 quarter cup of milk, a quarter cup of heavy cream, salt to taste.
Now, after you gathered all the ingredients you have to heat the oil in a large pan, add the nuts and stir until they become golden brown and then put them aside on a plate. It’s time for the onion to be put in the pan until tender. Make a mix out of ginger and garlic pasta and cook for 1 minute after which add tomato sauce, cayenne pepper, garam masala, turmeric, and coriander. Add water, raisings, green bell pepper, beans, carrots, peas, and potatoes. Leave everything on low fire for 20 minutes until the potatoes are cooked.
Cook the paneer on both sides in the remaining oil until it is golden brown and drain it on paper towels so it won’t be oily. Add in the pan with the vegetable and stir. In the end add cream and milk and let it boil for 2 or 3 minutes. Add salt to the taste
